Leaving Disneyland

Today sadly concludes our pre-holiday Disneyland trip. We had the best time, and even ended up buying Annual Passports (on a monthly payment plan with no interest, which is an awesome option). I was a bit worried about how difficult it might be to find food options for me, but I was actually pleasantly surprised at the number of choices I found. If anyone else is a vegetarian/ pescetarian looking for food options that don’t consist of crap like popcorn, pasta, and candy, do no despair! There actually are quite a few choices. Downtown Disney has two restaurants that are particularly vegetarian/ pescetarian friendly. Rainforest Cafe offers a garbanzo bean-based meatless burger, as well as a delicious tropical salad which can be ordered with shrimp instead of chicken at no additional cost. Tortilla Joe’s has an entire vegetarian section on their menu, ranging from healthy veggie enchiladas to burritos. They also have an ahi tuna salad that is quite tasty. Inside the California Adventure food court is an Asian restaurant which offers tofu rice bowls with four different sauce options. I went with the coconut curry sauce, and they were even nice enough to replace the rice in my bowl with double veggies! They also had a small snack pack of edemame. At Big Thunder Ranch in Disneyland, you can get BBQ’d veggie and tofu skewers. Additionally, there are many fruit and veggie options at snack stands throughout the parks. Even Goofy’s Kitchen has create-your-own egg white and veggie omelettes, smoked salmon, fruit, and a salad bar. You don’t have to succumb to the seemingly endless churro and pretzel vendors to enjoy your Disneyland trip! With a little planning, I managed to stick to my diet of healthily prepared veggies, fruits, nuts, eggs, and seafood. Enjoy!

After a long hiatus– it’s finals week, I’ve been planning a vacation, we are in the process of moving, and five million other excuses– tomorrow it’s finally time to get back to the gym. I’ve been told that I have some very tiny Christmas gifts to fit into.

Sometimes it is a challenge to remain positive when it comes to my own body image. It is imperative to embrace the shapes what we have been given, and to work toward a powerful, healthy, glowing version of ourselves.
